Farmer Jamie’s Whole Country Ham Recipe

You have been chosen to cook the ham for Christmas. Never fear, it is not as hard as you think it’s going to be. You just need a little time. The process below is incredibly simple, but you have to follow the directions exactly. You must not open the oven during the process. I tend to put the ham in the oven just after dinner so it is ready for the second 25-minute round by bedtime. After that second round, I turn the oven off and leave it there in the oven until the next morning. Then the ham will be ready to carve and eat.

Serves a crowd
1 large country ham
6 cups water

Unwrap the ham and wash it well. It may have some mold on it; if it does, use a clean sterilized sponge to scrub the mold off. If there is a layer of skin, leave it on—just clean it well.

Place the ham in a clean large cooler or the kitchen sink. Cover it in cold water and soak it overnight.

Preheat the oven to 500°.

Place the ham on a roasting rack in a large roasting pan. Add 6 cups water to the bottom of the pan and cover the entire pan tightly with aluminum foil. This step is important because you need to seal in the steam while cooking.

Do not open the oven door at any point in this process. The cooking depends on holding the heat and steam in the oven. Place the ham in the oven and cook it for 25 minutes. Turn the oven off. Do not open the oven door. Let the ham rest in the hot oven for 3 hours. Preheat the oven again to 500° and cook for another 25 minutes. Turn the oven off after 25 minutes and let the ham rest in the hot oven for 3 more hours, or overnight. Remove the ham from the oven, uncover it, and remove it from the pan. It will be ready to slice and serve.
